cheeky grin bento

Here is a bento I made a few days ago.  Fried rice with minced chicken, garlic, green beans and egg (with gochujang of course!), a little zucchini and tomato salad, and watercress, walnut and orange salad.   (The dressing is in a container hiding under the “bonbon”.)

Do you think the bonbon’s face is a bit creepy?  It wasn’t meant to be, I just drew it in a hurry and it turned out that way!  The bonbon was inspired by something I saw at a foodstore, little natural carob/nut/grain balls that are marketed as “energy bites”.  I like healthy treats and these seemed to make so I made some of my own.

Nutty Carob Energy Bites

Whizz a big handful each of organic rolled oats, raisins, walnuts, almonds, flax seeds, and a heaped tablespoon carob (or cocoa) in a food processor.  Add a big handful of dessicated coconut, a big spoonful of agave syrup, 3 to 4 tablespoons melted butter or coconut oil, and stir it in.  Roll them into walnut sized balls and roll in extra crushed walnuts if liked.  Store in an airtight container in the fridge, and wrap in wax paper individually for a transportable treat!  They only took a few minutes to make.  The storebought ones were $3.50 each…this big batch cost not much more than that!  So a much more economical alternative.

    Might have to give this a go, it sounds yum. Saw an interesting vegan recipe for chocolate tart – base was nuts and dates and the chocolate mousse-y bit was avocado, coconut oil, agarve and pure cocoa. Healthy comfort food! Will try it out and report back.

      Thanks for commenting! Yes, please let me know how that goes. I have to say the avocado sounds…interesting! Do you use agave and coconut oil much? It seems very popular these days.

        Have used agave for a while but this is a first time on the coconut oil – apparently it helps weight loss! Always willing to try food that allows me to eat more food!
