i love umeboshi.

I keep making lunches and forgetting to post them!  Here is one from this past week.  I made a huge pot of brown rice, following this stovetop method I found on Just Hungry (thank you Maki!).  I used to cook with brown rice a lot and have gotten out of the habit over the years.  I had forgotten how much I love it, especially with umeboshi.  I’d like to make some brown rice sushi again sometime soon.  So anyway, this simple bento was made with leftover frozen-defrosted rice.  I’d never frozen rice before, it turned out great.  Tamagoyaki, peas and corn with naturally-smoked wieners, brown rice and umeboshi.

We’re off to King’s Park today to view the wildflowers.  We’re bringing a picnic, so hopefully I will have photos to post this week! 🙂
