			<content:encoded><![CDATA[<p>Hot weather continued relentlessly this week, meaning salads are still on the menu.  Older son loves <a class="zem_slink" title="Caesar Salad" href="http://www.williams-sonoma.com/recipe/caesar-salad.html" rel="williamssonoma" target="_blank">caesar salad</a> so I made one for us for lunch, with leftover grilled chicken rather than bacon.  I even through in a few pieces of leftover grilled potato, not at all sure how that would turn out.  But it ended up being my favourite part!  Romaine, croutons, chicken, potatoes, and freshly grated parmesan, with some cheat dressing&#8230;Paul Newman&#8217;s original caesar!  I have to say, I love that stuff!<a href="http://bentowa.files.wordpress.com/2012/02/imgp3542.jpg"><img class="aligncenter size-full wp-image-420" title="chicken caesar salad bento" src="http://bentowa.files.wordpress.com/2012/02/imgp3542.jpg?w=640&#038;h=414" alt="" width="640" height="414" /></a>Also enjoying the last of the summer fruit, plums and nectarines.  They&#8217;re sweet enough to have with plain yogurt.</p>
<p>I love this plain metal tiffin box, I&#8217;ve had it for years.  And the little stainless steel cup with it came with my other, more recent bento box I got in Bali.  One of these days I might invest in another box I like the look of, an aluminium Totoro box.  Anyway, have a good one!</p>

			<content:encoded><![CDATA[<p>Can you tell I just love this plain, ordinary, little old lunch container.  I keep using it.  It&#8217;s so practical!  So, another chicken salad&#8230;this time with fresh bulb fennel from the garden, with corn kernels, and a few pickles, and a little Japanese mayonnaise.  A strange combination?  Somehow it worked.  A contrast of flavours.<br />

			<content:encoded><![CDATA[<p>I&#8217;ve been so slack lately, posting bentos from weeks before.  I thought it was time to post something recent.  In fact I haven&#8217;t even eaten this one yet!  It&#8217;s so hot and humid today I hardly feel like cooking or eating.  Lucky I had some leftover noodles from last night&#8217;s dinner.  Udon with chicken and vegetables, stir fried with garlic and teriyaki flavours.</p>

			<content:encoded><![CDATA[<p>What the hey?!  My kids are blogging more than me!!  I&#8217;d better hurry and catch up!  The school term is in full swing and today we did T and E (technology and enterprise) which basically entailed me showing the kids some digital photograph skills, including editing, and how to set up a blog and email account.  We got so much done!  It certainly seems to work best if they can let their interests lead the way.  Anyway, this is a little old bento from a little while back that I still didn&#8217;t get a chance to post.<br />
<a href="http://bentowa.files.wordpress.com/2012/02/imgp3442.jpg"><img class="aligncenter size-full wp-image-398" title="another geisha bento" src="http://bentowa.files.wordpress.com/2012/02/imgp3442.jpg?w=640&#038;h=474" alt="" width="640" height="474" /></a>Now that I&#8217;m not as hungry anymore (thanks to <a class="zem_slink" title="Paul McKenna" href="http://www.officialpaulmckenna.com/" rel="homepage">Paul McKenna</a>) this tiny little <a class="zem_slink" title="Bento" href="http://en.wikipedia.org/wiki/Bento" rel="wikipedia">bento box</a> is an ideal size for lunch.  It was leftover blackbean rice with &#8220;sprinkle&#8221;, and barbecued chicken bites, plus a little bowl of nori-soy soup.  The black bean rice was an adaptation of Maki&#8217;s recipe for soybean rice, <a title="link for soybean rice recipe" href="http://justhungry.com/setsubun-and-beans-article-japan-times-food-superstitions">here</a>.  Basically cooked seasoned blackbeans added to rice before cooking.  I loved it&#8230;the beans had the lovely dry taste, not at all mushy.  Great leftover, and would make great rice/bean burgers, if there was enough leftover!  Happy day, guys!</p>

			<content:encoded><![CDATA[<p>Today is a refreshingly cool summer day, only in the twenties degrees, and I&#8217;m in heaven!  But for the past couple of weeks or so it has been extremely hot and humid&#8230;and not a lot of fun for cooking or doing anything at all other than sitting down and drinking iced water!!  While it was at its hottest I had a very low appetite. One day as I was wondering what on earth to make for lunch I remembered another style of salad I haven&#8217;t made in a long time, from my macrobiotic days of long ago:<a href="http://bentowa.files.wordpress.com/2012/02/imgp3446.jpg"><img class="aligncenter size-full wp-image-390" title="lightly cooked vegetable salad" src="http://bentowa.files.wordpress.com/2012/02/imgp3446.jpg?w=640&#038;h=495" alt="" width="640" height="495" /></a>At the time we were living in the UK and I was studying part-time in London, while doing occasional cooking courses at what used to be known as the East West Centre.  Bob taught us this very simple dish, &#8220;boiled salad&#8221;, which sounds awful but was not, at all!  Basically using a few different vegetables on hand, at any time you can turn out a delicately flavoured, refreshing salad in just a few minutes.</p>
<p>Put a small pot with an inch of lightly salted water in it on to boil before slicing the vegetables.  Prepare two or three vegetables of contrasting colour, (and for macro cooking, think about contrasting energtics&#8230;some underground veg, some above ground, about sums it up).  When the water is boiling add one vegetable at a time, cover and time it religiously&#8230;30 seconds only.  Remove vegetables with a slotted spoon and place in a dish as you finish the others.  Serve at room temperature, with a light asian style dressing.  See my <a title="salad dressings post" href="http://bentowa.wordpress.com/?s=salad+dressing" target="_blank">post on dressings</a> for more info on that, or do as I did and make this spiffy Plum Dressing.  As a base I used a spiced <a class="zem_slink" title="Plum sauce" href="http://en.wikipedia.org/wiki/Plum_sauce" rel="wikipedia">plum sauce</a> I made at christmas time to go with our turkey.  You could use any good quality commercial plum sauce as a substitute.  Mix a good spoonful of plum sauce with an equal quantity of rice vinegar and half spoonful of dark sesame oil.  Taste for seasoning, and add salt if needed.<br />
I&#8217;m so glad I remembered that jar of plum sauce, the subtle undertone of cinnamon, cloves and anise stars gives a layer of bright complexity.  Now I&#8217;m wondering what to do with it next.  Maybe a sauce for spring rolls?</p>
<p>Finally, I did say in a previous post I would explain why I&#8217;m so crazy about salads at the moment.  Well, I&#8217;m almost embarrassed to admit that it&#8217;s&#8230;HYPNOSIS!  Yes, you read that, here!  I confess!  I&#8217;ve been doing <a class="zem_slink" title="Paul McKenna" href="http://www.officialpaulmckenna.com/" rel="homepage">Paul McKenna</a>&#8216;s &#8220;<a class="zem_slink" title="I Can Make You Thin: The Revolutionary System Used by More Than 3 Million People (Book and CD)" href="http://www.amazon.com/Can-Make-You-Thin-Revolutionary/dp/1402765711%3FSubscriptionId%3D0G81C5DAZ03ZR9WH9X82%26tag%3Dzemanta-20%26linkCode%3Dxm2%26camp%3D2025%26creative%3D165953%26creativeASIN%3D1402765711" rel="amazon">I Can Make You Thin</a>&#8221; program.  Incidentally, I&#8217;m shocked by how easy it is&#8230;not a diet, more like permission to enjoy food to the full and eat whenever your hungry.  As it turns out, when I eat whatever I want, it&#8217;s almost always something healthy!  Who&#8217;da thunk it??!  Anyway, each day I listen to the hypnosis cd (all positive uplifting stuff about enjoying life to the full) and I SWEAR it has made food taste so much better I can hardly believe it!  Yup.  I have been hypnotised to love salads.  Absolutely one hundred percent true.</p>

			<content:encoded><![CDATA[<p><a href="http://bentowa.files.wordpress.com/2012/01/imgp3434.jpg"><img class="aligncenter size-full wp-image-386" title="salad lunch for two" src="http://bentowa.files.wordpress.com/2012/01/imgp3434.jpg?w=640&#038;h=430" alt="" width="640" height="430" /></a>This week a friend of mine dropped by for lunch and a long-overdue chat.  I was busy in the morning doing some art-supplies shopping so I didn&#8217;t have time to cook anything in advance.  While she told me about her tango adventures I put together a quick salad plate, with those <a class="zem_slink" title="Heirloom tomato" href="http://en.wikipedia.org/wiki/Heirloom_tomato" rel="wikipedia">heirloom tomatoes</a> from the garden(down to the last few now!) and feta, with oil, vinegar and mint.  I made a quick smoked tuna dip by just draining it, and mixing in some mayo and spring onion.  Luckily the art store I went to was near Tammy&#8217;s, a local bakery that sells good sourdough, so I had picked up some multigrain rolls and rye and walnut bread, which we had with some oat and flax crackers I wanted to try.  My friend commented that I seemed to whip up lunch so easily, but to me it was not a big deal.  It&#8217;s easy to put something together with things you have on hand, using equipment that is right to hand.  I got thinking about this again today when I read one of my favourite sites, JustHungry, by Maki.  She has a link to a Japanese clip of a <a title="super efficient japanese kitchen" href="http://www.justhungry.com/super-efficient-japanese-kitchen">&#8220;super-efficient kitchen.&#8221;</a>  I find this so inspiring, it makes me want to go to my own kitchen and streamline things more, to get rid of junk I don&#8217;t use, and make this new kitchen more suited to my own way of doing things.  In our old house we had a kitchen of my own design, with dedicated work areas, and a lot of storage.  Here I have a different shape of kitchen that functions very differently.  I&#8217;d really like to make it better, then I will be able to cook without the awkwardness and mess that comes from disorganisation!  Time to reorganise the pantry again&#8230;</p>

			<content:encoded><![CDATA[<p><a href="http://bentowa.files.wordpress.com/2012/01/imgp3426.jpg"><img class="alignleft size-medium wp-image-379" title="oil and vinegars" src="http://bentowa.files.wordpress.com/2012/01/imgp3426.jpg?w=208&#038;h=300" alt="" width="208" height="300" /></a>So, salad dressings.  For Christmas this year a kind friend gave me this unusual gift, which I can only describe as a rack with three amphorae of dressing ingredients hanging from it, olive oil, red wine vinegar, and balsamic.  The little bottles are very quirky!  I suppose the idea of it is to have on the table, for people to dress their own salads?  Anyway, the gift seemed to come at a good time, when I am more than usually interested in experimenting with salads!  As promised, I want to mention some ideas for salad dressings.</p>
<p>The first thing I would say is that dressings are the most forgiving of food preparations, and it&#8217;s almost impossible to completely botch it!  So for inexperienced cooks, dressings are a great place to start.  Just go with your tastebuds, adding ingredients and flavourings a little at a time.  And the second thing I would say is that, though they seem simple, a dressing makes or breaks a salad!  It&#8217;s more of a method than a recipe, and it lends itself to artistry!</p>
<p>I like to make two different styles of dressings, Western and Asian.  I have found that a basic jar of each can be a good basis of improvisation.  Make your base dressings and keep in the fridge, simply decant a quantity of the base dressing and add the flavourings your daily salad seems to be asking for.</p>
<p>For the basic Western dressing, the classic standard is one part acidic ingredient, such as wine, balsamic, apple cider or other vinegar, lemon juice, or a combination of acidic fruit juice and vinegar, to three parts oil, like olive, grapeseed, canola, almond, walnut, etc.  The oil gives the dressing coating ability, and, if a flavoured oil like olive or walnut oil is used, also flavour.  Basic seasonings would be salt and pepper.</p>
<p>I find this classic dressing too oily for my taste, so I usually reduce the vinegar oil ratio to 1:1.  Of course this now creates a problem, the oil and vinegar separate.  So I solve this problem by adding a binding ingredient&#8230;either french mustard, miso, or tahini (sesame paste).  Whether you choose to add a thickener or go with the higher oil content, the last step is to jazz the dressing by incorporating other flavours, like fresh or dried herbs, spices, crushed garlic, crushed nuts, sesame seeds, or even chopped or pureed fresh fruit (eg. peach or apricot).  So as you can see, though dressings are humble and simple on the face of it, they offer enormous scope for creativity!</p>
<p>I would have to say my favourites would have to  be Asian dressings.  Because they don&#8217;t usually use oils these dressings are light and fresh, perfect for hot summer days, and very compatible partners for seafood!  There is no classic standard for Asian dressings, however, I find an easy place to start is with one part acidic ingredient (eg. rice vinegar, lime juice cut with water, or lemon juice, pineapple juice, or combination of more than one of these) to one part salty ingredient (eg. fish sauce, soy sauce, or miso thinned a little with water).  Because these dressings have no oil they don&#8217;t need a binder, but they can benefit from thickening; it helps the dressing to coat the salad.  Here I&#8217;m thinking, miso, tahini, or a little mild mustard, or even a pureed fruit, like mango.  Because the salt is included in the liquid seasoning, there is no need to add extra salt, but to cut the harsh acidity these dressings need a spoonful of sweetener.  Try brown, dark brown, demerara, or something a little more out there, like palm or coconut sugar.  Or perhaps honey, or rice, malt or maple syrup, or, a nod to my macrobiotic days, apple juice concentrate.  If you have added pureed fruit you&#8217;ve sweetened and thickened at the same time.</p>
<p>Once you have your basic dressing, time to add a few seasonings from the likes of ginger, garlic, spring onion, chillies, coriander leaves, black sesame seeds, finely chopped fresh pineapple or mango, finely shredded lime leaves, or plunge in a crushed stalk of lemongrass and stir around to inject some flavour.</p>
<p>Oh dear, is it all getting too complicated?  Then try this simplest of ideas: get a jar of sushi seasoning, which is a pre-made combination of rice vinegar, sweetener and salt, available at Asian groceries, or here in Australia, even the grocery store.  Add a couple of flavouring items from the list, eg, coriander, garlic and chilli, for an instant zingy dressing!  I like to keep sushi seasoning on hand, it is an extremely useful cook&#8217;s cheat!</p>
<p>So what to do with these dressings?  Start with your salad ingredients&#8230;what is in your fridge today?  Are your ingredients singing to you, western or asian style?  Here is a salad I made a few days ago, again using tomatoes from the garden, leftover grilled chicken, shredded carrot and purple cabbage, frilly lettuce, cucumber and coriander.  (The sliced chicken is hiding underneath!)<a href="http://bentowa.files.wordpress.com/2012/01/imgp3430.jpg"><img class="aligncenter size-full wp-image-378" title="asian chicken salad" src="http://bentowa.files.wordpress.com/2012/01/imgp3430.jpg?w=640&#038;h=553" alt="" width="640" height="553" /></a>For the dressing I used a simple Asian base combination of rice vinegar and fish sauce, and added demerara sugar, jalapeno pepper, garlic, and crushed peanuts.</p>
<p>One word of warning about the base dressings, if you do choose to use a fruit juice as your acidic ingredient your dressing will have a limited lifespan, and should certainly be kept in the fridge.  I recommend keeping all dressings in the fridge, and removing a little while before using if oils are used, to give the thickened dressing a chance to come to room temperature.</p>
<p>There is much more I would like to say about these humblest members of a cooks repertoire, including some specific recipes, but I will leave it for another time.  Also, I still didn&#8217;t mention just why I&#8217;m so obsessed with salads at the moment, but I think I&#8217;ll leave that for another time too!  And finally, before I go, you might like to have a look at some of the articles below for additional ideas on dressings&#8230;</p>

			<content:encoded><![CDATA[<p><a href="http://bentowa.files.wordpress.com/2012/01/imgp3422.jpg"><img class="aligncenter size-full wp-image-366" title="sunny salad bento" src="http://bentowa.files.wordpress.com/2012/01/imgp3422.jpg?w=640&#038;h=463" alt="" width="640" height="463" /></a>It&#8217;s mid-summer here in Perth, and often extremely hot.  All I feel like eating is salad!  Which is strange for me.  I&#8217;ve never been that crazy about salads.  I mean, I&#8217;ve liked but not CRAVED them.  This bento is some leftover brown rice with smoked tuna and spring onions mixed in, and a salad with what I had on hand.  And the little mouse guy is made with heirloom tomatoes from my tiny back garden.  The mint and mizuna flowers are also from the garden.  I have so many ideas for salads at the moment, and started making my own dressings again.  So easy it&#8217;s embarrassing to call it a &#8220;recipe.&#8221;  My favourite at the moment is simply balsamic with olive oil, sea salt, and a spoon of runny honey.  I reuse the store-bought dressing bottle.  Just whack it all in and shake.  Why haven&#8217;t I been doing this all along?  It&#8217;s so easy!  My next post will be about salad dressing&#8230;as you can tell, I&#8217;m really getting into this salad thing.  Also next time I will reveal WHY.</p>
